Is it possible to do Immo off
on 2005 sprinter EDC16C2 ?

As i know, no immo off for this Ecu, Only Emulator !

Or 

What kind of problem do u have, can aid u with immo rebuild !

original ecm is dead ,car is 700 km away, costumer bought used one
whats the solution now to make this car run ?

Check the eeprom 95320 of the original ecu it may not be damaged to transfer the data in donor!

You buy used ecu read eeprom and flash and post here i virginise...
