Can someone help me with this as I'm having some difficulty, or if there is a post detailing the step by step instructions then that would be fine too. 

I have the maps downloaded so first step is to get this 1b file. I plugged by usb into the car, turned on the ignition then removed it after 30 seconds...but nothing has appeared on the stick. 
I must be doing something obviously wrong or the thread i was following is wrong?

You read 1b file via cabel > obd , connecting to your head unit and download 1b file.

Is there someone that can explain how to generate the FSC code? 

I have the 1b.hex file on my USB but on the Jaeger FSC generator I've found online I can't select 2019-1 as a map to generate a code with...any help appreciated. 

If someone can explain that would be helpful as I'd like to do my friends car too.

I recommend the attached FSC generator, but there are more.
Just make sure to select lifetime or set map update code to 0xff
