in spdaten v60 i dont have this zb number

i have updated the ecu with istap now i lost tuned map and car dont start if i write back the backup file.

If you search the e60 Daten for kmm_ATSH.txt it has the ZB numbers, and newer versions. When I search your ZB and find the newest number at the bottom of that column, I'm getting 7811481

The ECU files always come in two parts, .0pa Program area, and .0da Data area.
The update has likely updated both the program and data area, and the new program section would require slightly different offsets for map locations.

Tuning files are usually only concerned with the data area, so the best solution is to start either a new remap, or compare your remap with an original, note down all of the changes, and make the same changes on the new file.

ecu firmware can be dowgraded?

i backup up the ecu dde with kess, updated ecu with istap to  try to fix some troble with engine fault, now i cant go back, if i flash backup data ecu car dont start.

This would be older than V41 SP daten.
V41 has two updates newer than this, so you would need to find some very old SP daten to get this file
