If I search ESYS I get hundreds of hits, nothing seems to be about the correct setup and usage, I see various guides online, but they all seem to differ, I'm looking to set it up so I can do small coding jobs such as checking an NBT is set to DAB+

I'm coming from years using NCS and this is very different so as much help as possible would be nice

It's a 2014 X5, do you know what version of esys and launcher I'll need to use or is there a version of esys that doesn't need a launcher that works?

It is not E-Sys version that is the issue, it is the PSdZData that is trimmed, and you need a CAFD Mapping Solution to work with E-Sys to map the missing data, so you need something like BimmerUtility.

What shawsheridan means is that you need a Launcher Pro , BimmerUtility is another software that does the sam as the Launcher Pro with one of these programs the PSDZData is not TRimmed anymore.
