the engine fan starts with the cold engine and when the engine is off it starts without any command since the batery goes flat

Check engine temperature sensor, disconect him end fan will starts, clean the contacts on him end check resistans with multimeter

Has the car got a DPF Filter? Fans will run if trying to do a regeneration of the DPF filter. There was a download from Peugeot for this era Peugeot 307 to stop the fans coming on as often.

I had similar problem, car had dpf before and it was disabled. And all problem started without any related problem before. I figure out that problem was with coolant pressure sensor. Few days later fan started again. After few days of searching i figure out that dps temperature sensor is problem. Exhaust temperature sensor resistance changed and constantly showing 900 C in exhaust pipe, and ecu is trying to cool down engine. I had to disconnect it only, because DPF was disabled.
