Can someone tell me why the VIILoader works perfectly with the English version of VCDS, it activates it correctly and the program is complete. However, the Spanish VCDS EST version activates it perfectly for me but it does not appear complete on some channels as an adaptation. Because those differences in one version and another, it is the VIILoader or the VCDS

I have vcds hex-v2 STM32f405 and I want to run it. What loader will be good for the interface and vcds version, and will it work with vcds AKP Polish.My vcds is on a better pcb, better version

No, you can't unlock SFD with VCDS. Use other tools like OBD11. (at least for the original sfd, don't think you can unlock sfd2)
